A grease trap is a holding tank with a number of baffles.  A grease trap is also known as a grease interceptor, grease arrestor or food and oil interceptor. Grease traps slow the flow of warm/hot greasy waste water from food preparation areas and commercial kitchens to allow the waste water to cool. As the water cools, suspended fats, oil and grease separate and float to the top.  Solid waste settles on the bottom of the tank. The cleaner and cooler water can then be discharged to the public sewer without fear of blocking the sewer. Grease traps can be installed above or below ground depending on the required application.
